Chewy Meyer Lemon Cookies
Here is my first post. It feels like it took me forever to do this.
So I thought I would start with these puppies. They are awesome. And those yummy orange/yellow beauties are Meyer lemons. A cross between a lemon and a mandarin orange… WHAAAAT!!!
SOOO good. You must start your search for them now. They are impossible to find. So if you see them BUY…..THEM…..ALL!!!
They were totally worth the search. Promise! When you find them, make these! You can also make these with regular lemons, they taste just as awesome.
Chewy Lemon Cookies
2 Cups + 2 Tablespoons all-purpose flour
1/2 Teaspoons baking soda
1/4 Teaspoon salt
1/2 Cup of unsalted butter, melted and slightly cooled
1 Cup sugar
1/4 Cup brown sugar
1 egg + 1 egg yolk
2 Tablespoons meyer lemon juice
2 Teaspoons grated lemon zest
1 Teaspoon vanilla extract
1 Teaspoon lemon extract
Preheat oven to 325 degrees .
Mix flour, baking soda and salt in a medium bowl.
In a larger bowl, add cooled butter and mix both sugars into it until smooth.
Add in egg and egg yolk, mixing to combine, then mix in vanilla and lemon extracts, lemon juice and lemon zest.
Stir in dry ingredients, mixing until a dough forms.
Using a Tablespoon, scoop the dough into balls and place on a baking sheet 2 inches apart.
Bake for 10-12 minutes, or until edges are slightly golden.
This yields 18 cookies
